This vinegar is brought to us by Monteverde in collaboration with Acetaia San Giacomo. Acetaia San Giacomo is owned by their great friend Andrea Bezzecchi. He’s traveled all over Italy with Chef Sarah, and has the distinct honor of being one of only 12 people in the world who taste Parmigiano-Reggiano to assure its quality for the Italian government. A step up in age from the Condimento, this is made in the same way, but aged for 8 years. It is best used for finishing touches.
